We have a family tradition that on snow days we make a big breakfast. French Toast is always a hit and when we get a clue the night before that we are getting a day off then we can get a jump on the prep and prepare an overnight French Toast recipe. This berry Brioche French toast recipe is a knock out hit every time we make it and today I am sharing my recipe with you.
You need to start with a large loaf of Brioche bread. I like Brioche because it is egg based and slightly sweet and it soaks up the egg beautifully. If you do not have access to a Brioche you could substitute a loaf of another crusty bread.
Break it up and put in a 9×13 baking dish. I love using my covered Pyrex dish for this because it’s snug for overnight and great if you are taking the dish to share it makes it portable with no mess!
Add a bag of frozen berries of your choice. I love the triple berry blend but use whatever I have in my freezer! Because it will thaw overnight frozen berries are perfect!
Now let’s get a mixing bowl out to prepare our French toast mix.
1 cup of milk
1 cup of flavored coffee creamer (I use vanilla)
1 TBS of vanilla
1 TBS of cinnamon
6 large eggs
Whisk all of these ingredients together until incorporated.
Slowly pour your mixture over the bread and berries. You want to spread it evenly as the bread will soak up the yummy mix. You have to wait a minimum of 4 hours of bake this but it’s better if you can let it sit on the fridge overnight before making.
Before baking I like to sprinkle a little bit of turbanado sugar on top. Just a tiny bit and it’s adds a tiny sugary crunch to the berry Brioche French toast casserole that makes it just perfect.
Put your oven on 350 degrees and bake for 45-55 minutes. 55 if you like it to be on the crispier side.
Serve with warm syrup and it will be a hit for your next snow day or brunch!
