There is not a lot of treasured recipes in my family. But, my Grandma Ryan’s macaroni salad is an exception and a true gem! No barbecue at my house is complete without it!
2 cups of cooked elbow macaroni
1-2 celery stick stalks
1 tbsp of a spicy mustard
Hard boiled eggs
1.5 cups of mayonniase
1 large can of tuna
1/4 cup of pickle juice (Don’t laugh! This is the secret ingredient that people can’t put their finger on but can’t get enough of!)
Start with mixing your ingredients with the exception of the eggs and the pickle juice. Don’t you just love prepping the ingredients in their own little bowls. Feels like my own little cooking show!
Incorporate it all into the cooked macaroni. Now add the pickle juice. This really is the secret ingredient! People ask all the time what the flavor they can’t decipher is! Most people can’t believe its pickle juice!
Now it needs to chill for at least an hour! The colder the better! My picture doesn’t show it covered but cover it up! In fact, if this a great recipe to make the night before! I really think it helps the flavors meld!
Next add your hard boiled eggs and serve and pepper to taste! It is really a refreshing alternative to your standard picnic salads! In fact it might just be the most fought over dish of who get to take home the leftovers, you know just in case we leave any left at all!
